Avocado Veggie Salad. Did I have you at avocado? I know that’s usually what sucks me in. Either way, welcome! Hopefully this edition of Tasty Tuesday will satisfy your taste buds. This recipe is no bake, short, and sweet! I created this recipe as I was basically searching for a healthy afternoon snack. I don’t know about you, but when 3:30pm hits, I typically have the urge to go for something sugary. I’m clearly trying to break this habit and desire, and thus have recently fallen in love with this recipe.
It’s really basic to make, and as I mentioned- no cooking is required! Not to mention, you’ll get a dense dose of vitamins and healthy fats, helping to properly fuel you and keep you feeling full. In addition to eating this solo as a snack, it would be a great side dish, appetizer for a party served with whole grain tortilla or pita chips, topped on a salad, put in a wrap, or served along side turkey slices for a nice hearty snack. Either way, enjoy!
- 2 peppers (I used 1 yellow and 1 red)
- 1 1/2- 2 cups chopped carrots
- ~1/8 cup olive oil
- ~1/8 cup balsamic vinegar
- 1 cup chopped cherry tomatoes
- 1 avocado
- Salt and pepper to taste
- Chop all ingredients and add to a bowl
- Add balsamic vinegar and olive oil, salt and pepper
- Mix all together and enjoy!
Note: You may find you want to adjust the amount of dressing and/or veggies and avocado based on your liking!
